Wine planning starts from one number: a standard 750ml bottle holds 25 ounces and pours five 5-ounce glasses. Over a full event most wine drinkers go through two to three glasses, which works out to about half a bottle each. That gives you a clean shortcut by the bottle: two bottles cover 5 drinkers, four cover 10, and a 12-bottle case yields roughly 60 glasses, or enough for 12 guests drinking only wine. Count only the people actually drinking wine, then round up by a bottle or two, since you can always recork what you do not open.

The red-to-white ratio is where most hosts over-buy one and run short on the other. A reliable default is about 60% white and rosé to 40% red, because chilled wine moves faster at parties and especially in warm weather. Shift toward red for a winter dinner or a steak-heavy menu, and toward white and sparkling for a summer afternoon or lighter food. If you want a third option without complicating the count, a single rosé pleases both camps and drinks like a white.

Serving temperature does more for perceived quality than price does. White and rosé show best at 45 to 50 degrees, which is about 20 minutes out of the fridge, while reds are at their best around 60 to 65 degrees, slightly cooler than most rooms, so a short chill helps in summer. Pull reds 30 minutes early to let them open up, and have two corkscrews on hand because the backup always earns its keep. For self-serve, set whites in an ice bucket and leave reds on the table so guests are not fighting one bottle opener all night.
